Anyone who has lived through the age 19-24 understands that unless you are going to culinary school, you are going to ruin your boxed mac and cheese and have to resort to plan B: frozen pizza. I am one of those people who somehow ruins boxed mac and cheese. Only until recently have I been able to make more than two dishes from scratch (sauerkraut and sausage with red potatoes and chicken soup are my mainstays). There have been many, many times in my life where I haven’t had a mentor to look up to culinary wise. Anthony Bourdaine is cool I guess, but I feel like he could get beat up by my five year old sister, and I don’t like cigarette ash in my meal. I need someone who could open their can of tomato sauce with a sniper rifle from over a mile away while he thinks about being one of the most feared men in MMA. There is only one man who met this description, I had to find Tim Kennedy to teach me to cook.

I got in contact with Tim last week, after hearing about his favorite marinara sauce that he has been cooking for years, I pestered the Army Ranger until he shared his secrets.

Now I will turn it over to Tim.

I have been to sniper school, starved at Ranger school, beaten in SERE school, and fantasized about food at all of them.

I learned to cook and fell in love with cooking when my mom would make us take cooking classes trying to compensate for my Dads influence (boxing, wrestling, shooting, martial arts).

Goat Cheese Marinara – My favorite home made Marinara recipe

 

Hard way:2 (14.5 ounce) cans stewed tomatoes

1 (6 ounce) can tomato paste

4 tablespoons chopped fresh parsley

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon sea salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground red pepper

6 tablespoons olive oil

1/3 cup finely diced onion

1/2 cup chardonnay wine

Directions

In a food processor place Italian tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt, and pepper. Blend until smooth.

In a large skillet over medium heat saute the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and white wine.

Simmer for 30 minutes, stirring occasionally.

Then take 8oz goat cheese place on top of 4 cups of marinara bake for 30 minutes, then broil for 5 min or till the goat cheese is brown on top.

Easy way:
Open a jar of your favorite marinara then take 8oz goat cheese place on top of 4 cups of marinara bake for 30 minutes, then broil for 5 min or till the goat cheese is brown on top.

Take french bread tear, dip and enjoy.

There you have it. Make it tonight and impress your wife/girlfriend/lover/hetero life mate. When they ask you how you made it tell them Tim Kennedy taught you. If they ask you who Tim Kennedy is refuse to serve them any delicious sauce until they watch all of his matches. Regardless of how long that takes. They must eat plain pasta and watch MMA.
